Crispy Chicken

This is one of my favorite weekday recipes it’s fast, easy, and you can make a large batch because they store and reheat well. Have you every gone to a Chinese restaurant and had General Tsos or Sesame Chicken? Well this isn’t exactly like that because we don’t deep fry the chicken but this is the same batter they use to make the chicken so crispy. One of my favorite things to do is dip the chicken in different types of mustard or toss it with some hot sauce.

Cajun Chicken

Way back on Mardi Gras I tried to make a Cajun chicken pasta. I pretty much followed the standard recipe and the only things I changed is that I omitted salt, butter, and heavy cream. Yeah, it kind of turns out that those are the three things that make Cajun chicken pasta amazing. Last weekend it hit me that the chicken itself tasted fine it was the sauce that was horrid. Don’t ever try to use Almond Milk as a replacement for heavy cream in savory recipes, it just sucks. This time around I just decided to make the chicken and then put it over some rice, I have to say it turned out nicely.

Jalapeno, Lime, and Smoked Mozzarella Turkey Burger

Today I have another great recipe for you from Chef Aaron McCargo! If you didn’t know, Chef McCargo has teamed up with Fresenius Medical Care to bring dialysis patients some really amazing and renal friendly recipes. You can find these recipes here and we will be slowly posting them as well.

I don’t know about you but this burger sounds awesome! Though you know me, I’m a chili head, but don’t worry there is only a hint of heat in this burger. Unless like me you deviate from the plan and dropped a few Serranos in.

I don’t know about you but I don’t have a grill nor do I have a George ForemanĀ® Grill, but don’t worry you can totally make this in a frying pan or if you’re fancy a grill pan. Though I am seriously thinking about getting a small 2-plate grill.

Big and Bold Taco Chicken Pizza and Guacamole

Happy Cinco De Mayo everyone! Or as my friends call today; “Revenge of the 5th!” Just Google it. 

I was so excited when I was contacted by someone who represents Chef Aaron McCargo and asked to post his dialysis friendly recipes on my blog. I never thought I would be posting other peoples recipes on here but to be honest I love this guy! I mean it’s not often a celebrity chef takes time out of his busy day, even though he is being paid by Fresenius Medical Care, to come up with renal safe dishes that taste amazing.

Since the entire goal of this blog is to get really great tasting recipes that are renal friendly in the hands of dialysis patients so they will actually stick to their diet, I have decided to post his recipes.
